Päiväkirja - Eringiffin, 12 marras 12

My weight is up a bit today from yesterday but TOM is in full swing so I am giving myself a little latitude.

Yesterday my mom says to me, "Thanksgiving is at your house this year, right?" I say, "Yes, that's right." but in my head I am thinking, "Crap! when did I agree to that? What am I going to do, oh no, oh no, oh NO!" To add to that, I can't even take the day after Thanksgiving off because my employer is so miserly with the paid vacation days and I don't have any regular vacation available since I blew it all on the trip to Montana last month. *Sigh* I need to figure out how to cook a turkey, pronto. I am having trouble visualizing any version of this scenario that doesn't end in a complete disaster. To fill all of my FS buddies in on why I feel this way... I never cook. I don't know how to cook. All the years DH and I lived in OH, we either got invited to someone's house or went to a Chinese restaurant on Thanksgiving, lol. Maybe I can just get one of those spiral cut hams... or maybe Boston Market!

Today I am thankful that things are starting to look a lot more promising at my current client's site. They are really making efforts to get their act together and it is exciting to be a part of it.

Suggestion: Bake the ham in a crock-pot! Super easy.

Turkey is so tricky to cook, don't cook it long enough and its raw, cook a minute to long and its dry. The one good thing is that all of the food will be under your control so you can make sure it fits into your eating plan.

Roasted Butternut Squash with Tart Cherries (in Recipes) is an easy & delicious side if you use cut butternut like they sell at Costco. I've always had someone else cook the turkey, so I'm no help there, sorry. I did see in the Trader Joe's ad that they sell fully cooked turkeys. Don't try buying the whole meal from a store like Thriftway; some friends tried once & it was bad. I like the ham idea.

If you want a turkey cooked real good...get a cooking bag..preheat your oven to 350...put a tbs..of flour in bag..put turkey in bag..seal it up with the tie thing is comes with.. put six slits in cooking bag at the top...always cook your turkey at least 30 minutes longer than it calls for or it won't be done..the cooking bag has the directions.. Oh make sure the turkey is not frozen...Hope this helps..:O)

Erin - turkey is one of the easiest things to cook! Bren is right - buy a fresh turkey or defrost a frozen one in your fridge (takes 48 hours), follow the directions on one of those cooking bags and it will come out perfect. Smash a few potatoes/cauliflower, squash, stuffing from Stove Top, and call it a day!

I agree. Turkey is easy - oh besides remembering to thaw it or buy fresh - don't forget to take the neck and giblets bag out BEFORE you cook. :) If there will just be a few of you you might opt for the breast only. Good luck! This year we are heading to a neighbors that will be frying the bird. CK - thanks for the idea for a side to take to the neighbors. My most favorite food - Costco squash!

OH yeah - the internal bag! LOL - they usually pack part inside and part on the other open end!

Erin, you will be fine...call me, I'll be your helpline if you need it! I was thinking about creating a recipe to take this year...put mashed parsnips in a pretty bowl, and stir a swirl of mashed cooked carrots through it. I think that would be delicious and pretty. Can you tell I LOVE to cook? I cook all of my meals, even though it's just me. I can help you!!

Erin.... the cooking bag is an awesome way to learn to bake a turkey. Easy peasy. Take the bag of stuff out of both cavities...it's gross but got to get them out. Lay them aside or boil them up and give the giblets to your pets. I DO! Put a whole onion inside the bird. Remove it later and toss away. Butter it all over or oil it with whatever you use as cooking oil. That's it. OR ~~ lots of place will do up the whole Thanksgiving meal for you. Walmart, Krogers, or whereever you shop. They are good too. I did this one year when I had to work the day before and after Thanksgiving. You pick it all up the night before... and heat it all up the next day before serving. No one needs to know. *wink* *wink*

haha, don't feel bad my dear.. I'm cooking this year as well and I haven't made a turkey in 20 years! But the tips listed here sound great! You'll be fine :D
