Maybe I shouldn’t call it tortilla soup 😆
It doesn’t have tortillas, beans or 🌽 and I did add some greens & cheddar cheese.
Maybe I should call it beefy Mexican Soup 😝

Idk. As far as I know buffalos don't have wings. So it's all good.

More or less, depending on your likes/dislikes 😉 I really didn’t measure, so measurements are approximate 😝
2 t olive oil
1 t minced garlic
1 thin slice onion, chopped
1 small jalapeño, minced
1 t chili powder
1 t cumin
1 t red pepper flakes (I like it hot)
Microwave about 2 minutes
1/4 c tomato sauce of choice (I love Rao’s)
1 c chicken broth
Microwave for 4 minutes
Stir in:
1/2 c power greens (baby spinach, baby kale, baby chard) chopped
2.5oz beef or chicken, chopped
50 g cheddar cheese, shredded or chopped
1 t lime or lemon juice
Top with:
Chopped avocado or dollops of guacamole (I use 1 Kirkland Signature organic chunky guacamole cup)
Chopped cilantro
Enjoy 😋
