OK, Fiber One pancake mix gets a thumbs up! I'm not normally a pancake person - big piles of carbs, and all - but as pancakes go, this stuff was worth the extra price. First, it tasted just fine - if anything, a little fluffier than the mix that normally got used here. But more importantly, this stuff had a ton less saturated fat, more fiber, a lot more protein and calcium, some potassium, less sodium....overall, just a huge difference nutritionally. We mixed in some ground almonds, blueberries, and a little banana, and it was very tasty and filling, with a low calorie footprint.
So, if you're gonna have pancakes, I strongly recommend Fiber One!
