DAY #1 of starting a NORMAL eating life. No, I'm not going to keep counting them, like I did with the fasting days. Glad to have that over and behind me! I was pleased that my weight gain this morning was only 0.2 pounds (up from 198.2 to 198.4) and that I'm still under 200. .
Yesterday, for breaking my fast, I had a piece of flounder, 1/2 of a banana and 10 cherries. I had planned to have avocado toast, but was too full. Immediately when I started eating, I felt my stomach bloat up and my pants became tighter.
This morning, I had the avocado toast for breakfast. 1/2 of a small avocado mashed with lime juice and cilantro on toasted Dave's Killer 21 Grains & Seeds Bread Thin. Now, I see why everyone is so in love with this bread. It is so "nutty" tasting! Toasted, it holds its shape perfectly, even when carrying a load of avocado. I give it a 5-star rating. I know a lot of people picture the toast WITH a couple hard-boiled eggs, tomatoes, yogurt or fruit - but I'm eating smaller meals more frequently. The toast was at 6am. About 8am, I'm going to have 2 boiled eggs, cut up with some onion and mayonnaise in them (a simple egg salad), with one piece of bacon.
Lunch will be at 11, and will be either 1/3 of a large baked potato covered in cheddar cheese with a couple slices of bacon, a few black olives and Ranch dressing. (I don't usually have a problem with dairy, except for ice cream, but I'm going to take a Lactaid since this will be the first time I've had dairy in my system in two months.)
About 1pm, I will have a small serving of 7-Layer Salad (American blend lettuce, red onions, frozen peas, mayonnaise, 1 T sugar (on a 9"x13" recipe), shredded cheese and crumbled bacon. I will also put some French Fried Onion Rings on top.
That'll get me to dinner at the Italian restaurant tonight. Lord willing, that's my PLAN. Everything I've mentioned will fit on a small salad plate or saucer, so they're not big portions.
