Made Sopa de Albondigas for Christmas dinner since it was just me. I figured I might as well have a special meal. I hope everyone had a great Christmas!

Back in New Mexico and the more I look at your Albondiga soup, the more prefect it looks! Definitely going to make some in the coming weeks. 😋

Welcome back to the freezing cold nights, but we can’t complain about daytime temps in the 50s in January, can we?? I do hope you make some Albondigas - I’ve been thinking about making some too. The only bad thing I can of about it is that I just can’t stop eating it. It’s one of my favorite meals and I have zero willpower when there’s a big pot of it on the stove! 😆

You're right, no complaints about the temps from me. Well, if you're going to indulge, Albondiga soup is not a bad way to go. 😋😋😋
