Christmas Eve Dinner (wouldn't all show in the picture). Far left (not shown) Chicken Salad on dinner rolls, (cut off) Chicken Rolls, (Crock pot) Sausage Balls, Devilled Eggs, Pimiento Cheese Spread, Spinach Dip, Shrimp & Crabmeat Salad, Potato Chips, Ranch Dip, Assorted Crackers, Chipped Beef, (desserts cut off) 7-Cup Fruit Salad, See's Fudge with Pecans, Peppermint Bark, Jackstraws, See's Fudge with No Nuts.
The Meatballs didn't make it to the party. My son blew a tire in the middle of a busy road. They had to have the car towed and got a Lyft back to their house (since they were closer to there). ALL they had to eat for their dinner was meatballs. So sad! Today, after church, we are taking them their presents and some of all the leftovers.
The Chicken Rolls I made were the biggest hit! (Brown n Serve Rolls, with the insides pinched out leaving a "shell", bread pinchings fried in a stick of butter then mixed with Chicken Soup, Chicken and Nutmeg, and stuffed back into the Roll Shells and baked.) Everybody said this was the best batch anyone had ever made (even my mother-in-law, from whom the recipe came).
My goal was to keep the day under 2,000 calories, which I did at 1,999! If I only eat what I have planned for today (1,664 calories), I will finish the week with an average daily calories of exactly 1,750 (my goal for the week - well, actually I had upped it to 1,800, but I think I can make the 1,750).
I gave away as much food as I could force on people! All the nutless fudge is gone, Jackstraws gone, Peppermint bark gone, Ranch Dip gone, potato chips gone, most of the crackers gone. We still have a couple of chicken sandwiches, a few Chicken Rolls, a handful of Sausage Balls, quite a bit of Spinach Dip and Fruit Salad, and a LOT of Shrimp & Crabmeat Salad.
My son said something very funny yesterday! As they were being driven home in the Lyft, he said to his wife, "See what I get for marrying a Jewish Girl!" She asked what that had to do with anything. He said, "All the CHRISTIANS made it to the party!" That gave us all a good belly laugh!
Goodbye week of indulgences! It's been fun, but I'm going back to the straight and narrow on Monday. I think I'll set my average daily calories for 1,500 for next week.
Hope you all had a good Christmas Eve and that a good Christmas Day awaits you!
