I like some gorgonzolas and blue cheeses but it seems to be hit or miss and due to cost I don't like to take the chance unless a product is on sell or I have a really good price. Hard to get good prices on fancy cheese... But feta goes on sell sometimes it also has a bite do you think 🤔 it could stand in place of the blue cheese?

Personally it was more the texture combo that I thought sounded interesting both the shredded fruit / veggie combo and then the creaminess of the cheese. I'm not sure if I would enjoy the inclusion of the oil or if I would perhaps add lemon juice. Or perhaps substituted instead for a small amount of sesame dressing or Miso perhaps? But I thought your recipe sounded really fun and interesting, thank you for sharing.

I like Feta cheese in this salad. I bought Gorgonzola for the first time. I like this cheese too but it is a little salty for me. Olive oil promotes better absorption of beta carotene from carrots. And I think that Miso sauce will work well in this recipe too. Enjoy 😊

Cool, I'll have to give it a try sometime when we have feta. We always have carrots and apples of some sort on hand. The other add-in is a staple so likely I would have it on hand at the time. I didn't know that olive oil helps with the absorption of beta carotene, that is neat to know. I like to watch this fella named Dr. Karen, on YouTube and he talks about food pairing a lot amoug other things like gut health.
