Made homemade ramen for dinner. I made the broth, used store bought noodles, marinated and grilled the pork, soft boiled some eggs. It's a bit of work but so so tasty. And warm soup was welcome on a cold snowy day.

Shoyu Ramen Makes 4-6 servings
5 cups Chicken Stock *OR Water & Chicken Bouillon (I sometimes do half chicken/half beef)
1 teaspoon Dashi Powder *Bonito type recommended
3/4 cup dried shiitake mushrooms
1 Green Onion, cut to 4 inches in length
1 clove Garlic, crushed
1 small piece Ginger, thinly sliced
1 teaspoon Sesame Oil
2 tablespoons Mirin
3-4 tablespoons Soy Sauce
Salt & Pepper
Place Chicken Stock, Dashi Powder, mushrooms, Spring Onion, Garlic, Ginger and Sesame Oil in a pot. Bring to the boil over high heat, then simmer for 30 minutes or until flavors are all well combined. With a slotted spoon or strainer, remove onion, garlic, and ginger (Since not all my kids like mushrooms, I strain those out as well and put into a separate bowl)
Add Soy Sauce and Mirin, and adjust the saltiness with Salt. Add finely ground Pepper to taste. Place cooked Ramen noodles in bowl, add ramen broth and your favorite toppings, and enjoy!
