Yum!!! You inspired me.
I need to eat as healthfully as I did just recently (other than lapses with food, at least in terms of trying at eating well *at first*).
My meals looked similar to that not that long ago, and are still far better than what I ate in my early 20s, but far from ideal.
I can do better! Thanks for posting something very similar to what I eat at best, when I’m in the mood for something light, and not in the mood for something heartier such as bean soup with corn + potatoes.

Cheese pancake:
1 large egg, 50 grams kefir, 25 grams flour (I used whole wheat) and 30 grams grated cheese (I used Mexican blend), salt and pepper or other seasonings by your taste - mix well together and cook like a regular pancake. Enjoy!

I’m looking forward to trying this. I bought high protein Yogurt instead of Kefir because my store only had the sweetened kind and I’m trying to cut the sugar.
